Ingredients:
2 cups flour
1/2 teaspoon baking powder
Pinch of salt
2 tablespoons butter
1 cup milk
2 quarts chicken broth
3 cups cooked chicken
In a bowl, combine flour, baking powder, and salt. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the milk until the dough forms a ball.
Heavily flour a work surface. Roll out the dough thin with a floured rolling pin. Cut the dumplings into squares about 2x2 inches.
Bring the chicken broth to a boil. Drop the dumplings in one at a time, stirring as you add them. The extra flour will help thicken the broth.
Cook for about 15-20 minutes or until the dumplings are cooked through and don't taste doughy.
Add the cooked chicken to the pot and serve.
